Trebbiano grapes from the Texas High Plains were allowed to ferment with native yeast. The resultant wine is a clear expression of Texas terroir.
Soft white pear color with aromas of flint, white flower, pear, and minerality. Crisp, refreshing, bone dry, with medium+ acid, medium+ alcohol, and light body.
Trebbiano received from PAKA (Timmons) Vineyard on the Texas High Plains was fermenting upon arrival. The pleasant aromas led the winemaking team to allow it to finish. Little else was done to this naturally expressive wine.
