The grape Montepulciano has produced a black-red colored wine with aromas of ripe blackberries, blackberry cobbler, cherry pie, pipe tobacco, tar, and molassses. On the palate, it is a medium bodied wine with moderate tannins and tart black cherry flavors.
The grapes were grown at Diamante Doble Vineyard in the Texas High Plains and were harvested in the early morning hours before being transported to the winery for processing. The fruit was de-stemmed on-board new mechanical harvester and was pumped into fermentation tanks where it underwent cold maceration for a short time before inoculation of primary fermentation. Gentle pump-overs for 5 short days , then inoculation of secondary fermentation prior to pressing. A short vatting time was followed by racking into neutral French oak.
