All grapes for this wine were sourced from the Texas Hill Country, primarily Mirasol and Tio Pancho Vineyards. Light crushing is followed by 5-7 days of cold maceration, before primary fermentation is pitched. Pump overs twice daily for duration of fermentation helped extract color and tannins to build structure. Secondary fermentation took place in neutral French oak with frequent barrel stirring.
