This wine has a dark ruby color and complex aromas of black cherry, cola, cinnamon, cardamom, allspice, and plum. On the palate, tart red cherry and white pepper combine with robust tannins to make an elegant and structured wine.
Our most popular flagship red wine comes from Mirasol Vineyard in Lampasas County. Grapes were harvested separately, within one week of each other in the early morning hours while the fruit was still cool and then transported the short distance to our winery. The grapes were de-stemmed and lightly crushed prior to cold maceration for short period. Primary fermentation was carried out with gentle pump-overs for period of 5 days before pressing the new wine into tank for short vatting time before wine was racked into neutral French oak barrels.
Primary fermentation in stainless steel and aging in neutral French Oak for 20 months.
