Our leaner Viognier has a liveliness on the palate that compliments characters of honeyed melon, apple, and white flowers. Produced from estate-grown grapes near our winery in San Saba, this is a lovely wine that would be welcomed at any spring dinner table.
This estate-grown Viognier is one of my favorite wines to produce. The grapes are grown high atop a hill in the northern hill country where they reach optimum ripeness. They are hand harvested in early morning, arriving at the winery early and cool where they are whole-berry pressed. The juice is chilled and settled prior to inoculation of fermentation with a long slow ferment.
