Working exclusively with 100% Texas-grown grapes, they embrace the challenges and complexities that come with producing wines in the Lone Star State. Unlike most California wines, the Texan wine-making process is influenced by a multitude of variables, making it a true science that requires expertise and adaptability.

To ensure the highest quality, Wedding Oak Winery works closely with dedicated Texas wine growers, sourcing 100% of their fruit from the Texas High Plains AVA and Texas Hill Country AVA. The Wedding Oak team focuses on partnering with local growers, often family run businesses, whose love and passion for growing wine spans generations.

Expertly Crafted

The connection between the terroir and the table links the grower, the transport provider and the wine cellar team in San Saba. It requires dedicated coordination as they move the valuable fruit from the vineyard, at just the right harvest chemistry, into their temperature-controlled space. From I-10 and San Antonio at the southern end to the New Mexico border and Amarillo to the northwest, the growing conditions, weather, soil-types, and water availability test all the variables that influence the wine quality.

Following our tradition of recruiting Texas talent, we engaged Van Johnson as our Production Winemaker. Earning his Bachelor of Science degree in Biochemistry from Texas Tech University, Van spent the past six years in Texas Hill Country wineries, gaining valuable experience in all aspects of wine making and cellar management. Van became part of the Wedding Oak family in June, 2023.

The winemaking process unfolds in three distinct stages:

Spring sees the vines emerge from dormancy, as well as the culmination of the cellar efforts through the demanding bottling of previous vintages.

As summer arrives, the excitement of harvest sweeps across the vineyards, beginning in mid-July and ending in late September and early October.

It is during the fall that the art and science of winemaking converge, as the grapes are fermented and then aged in either a tank or predominantly French oak wooden barrels. White wines are generally bottled the following year, while red wines luxuriate for an indulgent 18-24 months, enhancing their flavor profiles.

Fostering Sustainability

Beyond our commitment to crafting exquisite wines, we embrace a sustainable model of operation. Any leftover mash from the fermentation and maceration process finds a purpose in local farms, where it serves as nourishment for animals, exemplifying our dedication to minimizing waste and promoting environmental responsibility.
